The very short answer is that you make a knob and change its type (or subtype) to "Octave Transpose"... now add ALL of the keys in question as subcontrols. This knob will allow you to move around octaves. Then add steppers to control this knob.

Great. I was doing it correctly the first time except for accepting the default transpose range. Once I did that, it worked flawlessly. I had initially set the +/-8va transpose limits to -2/+6 and it responded erratically.
Great to hear. You can definitely do cool stuff, but studying the defaults is the only way to understand how. Glad you got sorted!
