Thanks so much for you honesty. It makes me want to open a new category on the Q&A site called, "fundamental things that are totally wrong in MIDI Designer." The two-page layout is definitely a top complaint. The look and feel is another. Somehow 8+ years of free updates on a $25 base doesn't show up.
Seriously, though: Our main concern over the last few years has been the opposite -- layouts getting destroyed going from iPad to iPhone -- but the problem is 100% the same. For now there is no solution, but there are some workarounds. All of them are time consuming and annoying: head back to the device your layout works on, mail your layout to yourself, and then begin destroying your layout so that it will transfer well.
This is a particular concern for users who are helping other users by sharing layouts that control gear-everybody has. Your one-off case is interesting to musicians like me, too, who have their own rigs.
Anyway, most users who start in the situation in which you've ended up -- wanting One Big page on iPad -- have had to use the One Big Page feature. It's not perfect, of course, but it will get you most of the way there.
Given where you've started, though, it's going to be a lot of user work to get to something workable on iPad.
